Spring is officially here, as are the blue skies and blossoming trees and flowers. Nature, especially this time of year, is a constant reminder of the vast power in the universe. It is a reminder of the cycles that occur regardless of what is going on with each human beings created lives. This i adore. It speaks volumes of the human mind, both positive and negative. Mostly though, it speaks to our interconnectedness if we pause long enough to take notice. As spring continues to unveil itself to us, may we not forget that we are equally a part of the cycles. This time of year is full of budding potential, fresh, new ideas and inspirations as well as change and excited energy. Nourish has been very busy embracing change, and being inspired not only by nature but by all of our clients and friends. Here in photos are a few of the things that we have been up to. Most of our energy has been spent lately on creating vegan/gluten free and vegan/raw food meals plans for private clients. Its has been invigorating, creative, positive and lovely. I am beyond grateful to be able to do what I love and have amazingly grateful clients who appreciate it. Happy Spring!!

Rest. We all need it. Physically, emotionally, mentally, spiritually; we need rest. Winter is a time that nudges, and often forces us to pay attention to this need. Whether i allow myself an extra few minutes in bed when I awake, or stay meditating longer than usual, or stay home on a day off to create nourishing food, read and just simply listen to what my body needs, these are all forms of rest for me. I have been focused on raw food recipes more and more, as well as home juicing to nourish my mind, body and soul during this very important time in our cycle of the seasons. On this January afternoon I see sunshine, blue skies and breathe crisp, cold air as I write this post. This is an oddity for Portland, OR at this time of year, but it is what I have had the pleasure of experiencing for numerous days in a row now. I feel grateful and blessed. The winter weather is a reminder of the importance of hibernation, rest, introspection. My time and energy has been focused on yoga practice, meditation practice, setting good intentions for 2013, and of course amazing vegan food. I have a new dehydrator and have been experimenting with more raw food dishes… Enjoy the images! Stay warm and be real!
As the feel and smell of the air begins to change in its ever so subtle ways, I always feel an overwhelming desire to follow nature’s lead at this time of year. Fall is my favorite season. It reflects a winding down, a celebration of hard work; it rewards us with a bountiful harvest. It gently nudges the soul to accept inevitable change. While it is always a transition to accept the shorter days of sunshine, the changing weather, the slow decline and ultimate death of the trees and plants, it is simultaneously refreshing and new and challenges me time and time again. I begin to see that the cycles of life are necessary and beautiful and that if we accept these cycles, and changes and reside in the present, we are gifted with the true meaning of life. Life is fragile, beautiful, magical, deep and connected. I am taking this day to live in the moment and to experience, feel and reflect where I am currently, because it is truly all I really have. this moment…
As for Nourish, it has been a beautiful summer with lots of adventure. We are honing in on creating more accessible services to our community including juice and raw food detox packages, private cooking/raw food classes and lessons, catering, private chef services and pop up raw/vegan and vegan dinner events through the city. We are also working to connect with and collaborate with other like minded vegan and raw food people in Portland. The Fall season is upon us, and Nourish is excited about the fall harvest items available to continue to create tasty, healthy, organic, ethical nourishment for all..

“Microgreen” is the universal name for almost any green vegetable or herb that has edible leaves and is harvested at the coteleydon growth stage — the stage when the first set of true leaves sprout. Microgreens can be harvested from many different sources, including kale, arugula, radish, beet, sunflowers, peas, watercress, chard and many herbs like basil, chervil, parsley and chives. The flavor profile of each microgreen depends upon its origination. For example, an arugula microgreen will be a more intense, powerful flavor experience of the spicy variety, similar to arugula.
SO, why should we eat these little things?
Well, the nutritional profile of microgreens varies, again, dependent upon the type of seed it is grown from. For example, leafy greens such as kale and chard are a good source of calcium and iron. The microgreens are easy and fast to grow on your own using organic seeds. This guarantees no use of pesticides while providing you with a quick, tasty, nutritional addition to salads, sandwiches and smoothies!
